I've made some updates to a Ruby gem, but the original developer seems to have disappeared, so I am going to fork it, and give my updated version a new gem name. I've never written a gem before, but looking at the original gem metadata, it looks easy enough to modify.
What I am wondering is what to do with the author information. So far, I've barely done anything compared to what was done before, so I'm not going to replace the original author's name with mine, do I put both in, or what?

Usually what I see happen in the OSS world is you put "Copyright w - x Original Author," then "Copyright y - z Me."

Yes, you keep both.
