It seems like java is displaying in Chinese at my house, how can I set it in english?

Is it displaying Chinese at your house or computer? If it's your house, then you may need new paint
Serious Answer: It is displaying in Chinese because your computer language is set as such and your compiler is simply using your system language. To view this in English, you would have to change your language (at least temporarily) to English.

And ... one more question...
I can't set the open format to jcreator ( I have to open jcreator first then open the file)

You can right-click, open with -> choose program... and choose JCreator and check the box to Always use this program to open this filetype.
If that doesn't work, it could also possibly be done through settings/options in JCreator itself.
