So it seems that I have to learn C# next year and I was wondering what platform the prof would most likely use. I'm in ECE at Waterloo and I would prefer to use the same platform as the prof so that hopefully, my programs run the same on his computer.

Your assignments will most likely be marked by TAs, not professors. They will let you know what tools they'll use some time near the first (programming) assignment.

Alternatively you could just find the online pages / newsgroups for the class in question, and see if anything was posted for the previous term(s).

Isn't there only, err, one C# platform that anyone would seriously consider using?

Yes, but there are 4 major point versions of the .Net framework. .Net 4.x was released just this year. It's possible that they'll be running 3.0 or 3.5, depending on when ECE picked up on C# and on the upgrade schedules.
