Changing default destination folder

I just got a 500 Gb external hard drive to store all my pictures/videos/music (It was the smallest size they had) because 120-something GB of my 120-something-a-bit-bigger GB hard drive was used up, mostly pictures, music, and video. Now, my dad really doesn't like pushing extra buttons, or changing the file directory. It really can be quite a pain. The solution? Change the default directory! Unfortunately, I have no idea as to how to go about doing this. So I'll ask. How do I go about doing this?

Make a shortcut to the directory?  
That or organize the folder well, and tell him to suck it up.  My external hard drive is organized well:
Music/Artists/Albums
Video[/series]
Pictures/Date-Uploaded
Programs/Program-Name
if that's hard to navigate, then how does he use a computer? o.O

I want the windows picture/fax viewer to change the default C:\my documents\my pictures to G:\my pictures. 
He won't suck it up, my dad can be quite the SOB sometimes. He'd just undo everything and throw out the hard drive he just spent $120 on.
